Another great recipe from You're Invited Back cookbook that I got for Christmas. This was the best balsamic salad dressing I have ever tasted! You can switch up the ingredients in the salad but we used:
baby spinach leaves, toasted pine nuts, goat cheese and fresh sliced pears.
Maple Balsamic Salad Dressing
2 shallots, finely chopped
2 teaspoons dijon mustard
1 1/2 tablespoons balsamic vinegar
1/2 cup extra virgin olive oil
1 1/2 tablespoons of maple syrup
salt and pepper to taste
Combine shallots, mustard and vinegar in a bowl. Whisk in the olive oil gradually. Stir in the maple syrup and season with salad and pepper.
