Parmesan Panko Pork Chops



3-4 pork chops

1 egg

1 cup panko bread crumbs

1/2 fresh grated parmesan cheese

salt and pepper

olive oil

Heat a large skillet with olive oil.
Season the pork chops liberally with salt and pepper.
Set up two dishes: 1 with a beaten egg, 1 with a mix of panko bread crumbs and parmesan mixed together.
Dip each pork chop in the egg and then coat with the panko parmesan mixture.
Sear both sides of the coated pork chop in the olive oil until browned (3-4 minutes each side)
Bake in the oven at 400 degrees until cooked through (roughly 10 minutes).
Tonight we had it with scalloped potatoes and fresh sauteed spinach.
