Rawberry Pie
This was my favorite dessert that my Mom used to make - it so reminds me of growing up in the summer time. It is so easy to make and very light and fresh tasting.
What you'll need:
1 graham cracker pie crust (I used the reduced fat kind)
approximately 1 container of fresh strawberries - sliced
3 Tbsp strawberry jello mix
1/2 cup sugar
3 Tbsp corn starch
1 cup water
1 container Cool Whip
What you'll do:
Fill the pie crust almost to the top with sliced fresh strawberries but reserve some for the topping.
In a small sauce pan heat the jello mix, sugar, corn starch and water. Continue stirring until it comes to a boil and all of the sugar, etc. is dissolved.
Pour the jello mixture over the berries into the pie crust.
Refrigerate and let set.
Top with the whipped cream and sprinkle saved berries on the top.
