Christmas Potato Casserole
5 cups of potatoes
1-2 cloves of chopped garlic
1/2 cup of diced onion
1/4 cup of melted butter
1 can of cream of chicken soup
8 ounces of sour cream
1 1/2 cups of grated cheese
salt and pepper to taste
dash red pepper flakes
Sautee the garlic and onions in with the butter. In a large bowl mix the remaining ingredients together (save half the cheese aside). Once the onions and garic have caramelized, mix them in with the other ingredients. Pour everything into a greased casserole dish and top with the remaining cheese. Cook at 325 degrees for 45 minutes.
Looks delish! Are the potatoes shredded or sliced or what?
ReplyDeleteOkay, I might have cheated a little bit on this one and used frozen ones. But that was only because I was a little under the weather. You just dice them into little pieces.

ReplyDeleteMade this last night for a new year's potluck. I grated the potatoes and used cream of mushroom soup to make it veggie friendly. It was tasty! Jen and I had leftovers for breakfast this morning. :)
