Cream Cheese Stuffed Bacon Wrapped Chicken with Roasted Asaparagus



Yeah, that's a mouth full of a title but this dish was so yummy and surprisingly easy!!  Not to mention, what isn't better when it is wrapped in bacon?

Roasted asparagus are one of my favorite side dishes - so easy and flavorful.  Found some great looking asparagus at the store and spread them on a baking dish.  Season very simply with salt, pepper and olive oil and roast in the oven for about 15 minutes at 425 degrees.



Cream Cheese Stuffed Bacon Wrapped Chicken

What You Need:
3-4 large chicken breasts
6-8 slices of bacon, uncooked
1/2 block of cream cheese, softened to room temperature
1/2 cup scallions, chopped
salt and pepper

What You Do:
Let cream cheese soften at room temperature.  Add scallions in a bowl with the cream cheese and mix together.


Pound out chicken breasts until they are approximately 1/4 inches thick.  Season generously with salt and pepper. 

Spread an even amount of the cream cheese mixture on the chicken. 


Roll up the chicken so the cream cheese is in the center.  Wrap each breast with bacon.  I used two slices per chicken breast. 


Bake chicken at 425 degrees for about 30 minutes or until chicken is cooked through.  Broil on high at the end for approximately 3-4 minutes or until bacon is browned.


The asparagus goes perfectly with this since you can cook them at the same time as the chicken.  We had wild rice on the side as well. 

This dish is really versatile.  You could sub out the scallions for any herb of your choice - or just used herbed cream cheese!
