Lemon and Rosemary Pork Tenderloin
Nothing says summer like a little citrus flavor. We had a couple of lemons and an overgrown rosemary plant in our backyard so I concocted this marinade for a pork tenderloin and it turned out fabulously!
What You'll Need:
pork tenderloin
2 large lemons
olive oil
4-5 large sprigs of fresh rosemary
3 cloves garlic, chopped
salt and pepper
kitchen string
What You'll Do:
Place tenderloin in a casserole dish. Zest 1 lemon on top of it and cover with the juice of both lemons. Sprinkle chopped garlic over the tenderloin and season generously with salt and pepper. Douse tenderloin with 3-4 tablespoons of olive oil and then use your hands to rub on all of the ingredients all over the meat. Take the springs of rosemary and place them on each side of the pork and tie it up with kitchen string.
Grill on medium heat for about 10 minutes or until pork is cooked all the way through.
We had ours with homemade mashed taters and peas.
