Sour Cream Noodle Bake
I have a memory of my Dad and this Sour Cream Noodle Bake when I was growing up. I haven't had it in ages but I recently saw a picture on Pinterest of a similar recipe that the Pioneer Woman did and so I thought I'd try this -- with my own doctoring of course! Instead of transferring this to a casserole dish, I cooked it all in one skillet on the stove top and finished it off under the broiler to toast up the cheese. Less dishes - same goodness.
What You'll Need:
1 large yellow onion, diced finely
1 pound lean ground beef
1/2 bag of egg noodles
1 8 ounce can of tomato sauce
1 1/2 cups sour cream
1 1/2 cups cottage cheese
2 cups cheddar cheese
large handful of parsley, chopped or dried
2 tbsp olive oil
1 tbsp herbs de provence
salt and pepper to taste
What You'll Do:
Sautee onions in olive oil until softened and beginning to brown. Add ground beef and cook all the way through. Season with salt and pepper and herbs.
Add the tomato sauce and let simmer to let the flavors meld.
Add the sour cream, cream cheese and cooked egg noodles. Season with additional salt and pepper as needed.
Top with cheddar cheese and put under broiler for about 5 minutes or until cheese is melted and browned slightly. Enjoy!
