Grilling Machines

I know I've complained about a million times about how small our kitchen is.  I've also discovered how to cook entire meals on the grill outside to minimize our clean up since there is no dishwasher.  I blogged about one here.

Last night we had another.  We grilled chicken simply seasoned with Cavender's Greek Seasoning.  If you haven't used it, try it!  It works on everything but is especially yummy on meats.  I thinly sliced yukon gold potatoes and seasoned them with sea salt, black pepper and rosemary.  We used an alumninum tray and set it straight on the grill.  They got yummy and charred and crispy.

And for our vegetable?  Grilled salad, of course!  Lightly coat romaine lettuce with olive oil and grill on each side for about a minute or two, until some grill marks appear but not so much that the lettuce melts.  We had ours with pecans, grape tomatoes and homemade caesar salad dressing (see recipe below).


Caesar Dressing
1/4 cup low fat mayonaise
1/4 cup red wine vinegar
4 garlic cloves
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco
1/2 cup plus 2 tablespoons of vegetable oil
salt and freshly ground pepper

Combine everything in a food processor or blender and chill before serving.
