Weeknight Inspiration: Ravioli Remedy

Here is an easy, quick way to doctor up your store bought ravioli. You could do many variations on this but here is what I did.

1 pkg of store bought ravioli (you can use any kind you like; I used spinach and ricotta)
1 small yellow onion
1 1/2 cups chopped portobella mushrooms
1 cup chopped ham
2/3 cup peas
2 cups half and half (I used the fat free kind)
1/4 cup sage
salt and pepper to taste
2 Tbsp olive oil

Sautee the onion, mushrooms and ham in the olive oil. Season with salt and pepper and cook until onions are translucent and everything gets a nice brown color on it.


Add the peas and sage and sautee for another minute. Add the half and half. Season with salt and pepper if needed.

Boil salted water and cook the ravioli according to the package directions. Once cooked, drain the ravioli and add to the sauce mixture.

I added some additional cracked black pepper once I plated it.
