Weeknight Inspiration: Shrimp Supper

Easy, healthy, beat the weekday doldrums meal here. Just what I need for my first day back to work in two weeks...I know, I know, I can't really complain.





Shrimp Boil

1 lb. de-veined, shell on shrimp
1 beer
old bay seasoning

Heat a large pot of water, 1 beer and a generous portion of Old Bay seasoning and bring to a boil.
Cook shrimp for about 3-4 minutes until they turn pink and are floating. Serve with plenty of paper towels, fresh squeezed lemon and cocktail sauce.

Easy Cocktail Sauce

2 Tbsp ketchup
1 Tbsp grated horseradish
fresh ground pepper
fresh lemon juice

Mix together. Makes one individual serving. I like to serve each person's in their own ramekin.

Ursula's Green Beans

1/2 pound fresh green beans
1/4 tablespoon butter
1 tsp Knorr seasoning
1 tsp dried parsley flakes
salt and pepper to taste

Steam the green beans. In a separate bowl add the butter, parsley, Knorr seasoning and salt and pepper. Toss in the green beans so that they melt the butter and mix everything together.

I like to serve the shrimp and green beans with boiled potatoes for a low country boil feel.
