Simple Stir Fry

This is an easy, quick dish that hardly needs a recipe. Great for weeknights and makes great leftovers.













1 lb. meat (beef used here)
1 onion
2 bell peppers
broccoli & carrots
fresh grated ginger
1/2 cup soy sauce
red pepper flakes
salt and pepper
2 Tbsp olive oil
1 cup rice

Cook rice in medium sauce pan.

Season meat with salt and pepper and red pepper flakes. Heat olive oil in pan and brown meat until cooked through. Remove from pan. Add a little more olive oil and throw in the veggies. Cook over low heat and add salt and pepper and red pepper flakes to season. Grate in the fresh ginger. After the veggies begin to cook down, add soy sauce. Once the veggies are tender and cooked, add the meat back in and let everything simmer together 1-2 minutes. Serve over rice.
