Christmas Potato Casserole

Every year our family Christmas dinner has these two staples: beef tenderloin and Christmas potato casserole. The other sides come and go but these two are must haves. My mom always made the Christmas potato casserole - and the best part is, you can make it ahead of time and freeze it for later. Simple to make and seriously comforting to eat. We are travelling for the holidays this year but I am making this ahead of time to freeze it. Luckily someone else is dealing with the tenderloin this year...

Christmas Potato Casserole
5 cups of potatoes
1-2 cloves of chopped garlic
1/2 cup of diced onion
1/4 cup of melted butter
1 can of cream of chicken soup
8 ounces of sour cream
1 1/2 cups of grated cheese
salt and pepper to taste
dash red pepper flakes


Sautee the garlic and onions in with the butter. In a large bowl mix the remaining ingredients together (save half the cheese aside). Once the onions and garic have caramelized, mix them in with the other ingredients. Pour everything into a greased casserole dish and top with the remaining cheese. Cook at 325 degrees for 45 minutes.

  2. Okay, I might have cheated a little bit on this one and used frozen ones. But that was only because I was a little under the weather. You just dice them into little pieces.

  6. Made this last night for a new year's potluck. I grated the potatoes and used cream of mushroom soup to make it veggie friendly. It was tasty! Jen and I had leftovers for breakfast this morning. :)
